Wynn Las Vegas Announces New Chef Appointments and Welcomes Fresh Talent for 2018

Resort continues to offer guests an unparalleled dining experience with updates to three restaurants and the beverage program

LAS VEGAS (November 21, 2017) – Continuing Wynn’s tradition of culinary excellence, the resort adds fresh talent to the lauded food and beverage team, appointing Luke Palladino as Executive Chef of Sinatra. Bringing new flavor and energy to the classic Italian restaurant, Palladino, formerly of Salute Trattoria Italiana in Las Vegas, is an accomplished veteran of Italian cuisine and culture with more than 25 years of industry expertise. A graduate of the Culinary Institute of America, Palladino spent four years residing in and eating his way through Italy before returning to the United States and working with some of the country’s most renowned chefs. Now at the helm of Sinatra, the award-winning chef puts his innovative twist on classic Italian dishes, while continuing to pay homage to Ol’ Blue Eyes.

The resort also welcomes master mixologist Andrew Pollard to the beverage team as Assistant Director of Beverage Development. Formerly a beverage development specialist with Breakthru Beverage Nevada, Pollard has spent years providing consultative support—from menu and bar development and brand education to operating procedures and technical training— for some of Las Vegas’s top resorts, restaurants, bars and nightclubs. Pollard now brings his expertise and diverse skill set to oversee the cocktail menu development and beverage programming at the bars, lounges and restaurants at Wynn Las Vegas.

Additionally, Wynn’s culinary talent is making moves within the resort. Executive Chef David Middleton of Tableau has joined the team at Lakeside as Chef de Cuisine, where he will work alongside Executive Chef David Walzog to showcase the award-winning restaurant’s "ocean-to-table" menu featuring fresh fish caught from Hawaiian waters, an exotic variety of oven roasted lobster and crab, prime aged steaks and more. Tableau, the seasonally driven American-style restaurant at Wynn, will now be helmed by Executive Chef Rene Lenger, formerly of The Country Club – a New American Steakhouse, which closed to make way for the construction of Paradise Park.
